Blue Tokai Coffee Roasters, founded in 2012-13 by Matt Chitharanjan, Namrata Asthana and Shivam Shahi, pioneered India's specialty 'farm-to-cup' coffee movement, sourcing directly from 80+ Indian estates, mainly in Karnataka. It operates roasteries in Delhi, Mumbai, Bengaluru and Tokyo plus 100+ cafés, and offers public roastery tours letting visitors trace beans from estate to cup.
